I came back from the gym this morning with this urge to bake something. Probably counterproductive, negating the work I did at the gym, but hey, its the holidays and I’m off work for awhile.
I decided to use up some of the apples we’ve had lying around and slightly modified this recipe. I used half white flour and half whole wheat flour, and substituted applesauce for the oil. The applesauce mod is a common one around here. I also used half brown sugar and half white sugar. Oh, and I omitted the walnuts, but not on purpose. I just forgot to add them in!
And…its crap. Well, not exactly crap. The bread was really really good when I took it out of the oven. And I’m not sure if its the whole wheat flour or if its the applesauce and brown sugar, something just doesn’t work right. Something made the middle all gooey and not-quite-cooked while the edges dried out. After an hour sitting on the counter, the bread is not edible.
Maybe less whole wheat flour? More applesauce or something to moisten it up? I have no idea.
Baking is not something I’m good at. Not. At. All.
And I’m ok outsourcing the sweet stuff (for example, my Seester is bringing the dessert for Christmas Eve)
